Rack of Lamb or Rack of Pork
Ingredients:
- pork rack or lamb rack, frenched, with chine bone removed
- 1/2 cup low sodium soy sauce
- 1/2 cup olive oil
- 12 cloves of garlic, peeled, crushed & chunked
- 2-3 tbsp. dried rosemary or 3 sprigs fresh
Preparation:
Put all ingredients in 1 gal. plastic sealable bag and marinate (4-6 hours for lamb, overnight for pork). Turn occassionally.
Place the meat on oven rack in a shallow roasting pan and bake at 3500 until desired doneness is reached. Remove the garlic from the marinade and add to rack for the last 15 mintues of cooking time.
Bake the pork for 70 minutes or the lamb for 55 minutes. Slice the racks between the ribs and add 2-3 pieces of chunked, cooked garlic.
Serve with mint jelly.
